Gluten-free hot cross buns!


Gluten-free hot cross buns!

You know it's Easter when you see hot cross buns popping up! Here's a delicious and simple gluten-free option.

INGREDIENTS

For the bun
  • 1 x packet of gluten free bread mix
  • 1 x sachet dried yeast
  • 1/c cup caster sugar
  • Dash of mixed spice
  • 1 teaspoon of cinnamon
  • 1 cup of sultanas
  • 1 tablespoon of butter
For the cross
  • ½ cup of gluten-free self-raising flour
  • ½ cup of water
METHOD
  1. Preheat the oven to 220C (fan-forced)
  2. Combine sugar, butter, yeast and sultanas with warm water and mix
  3. Add spices and bread mix – combine
  4. Rest the dough for approx. 10 minutes, then kneed until elastic
  5. Roll the dough into small balls and place on tray
  6. Cover with damp cloth/tea towel and let sit for a further 30mins
  7. For the ‘cross’ mix – combine gluten-free self-raising with water and sppon mix into piping bag
  8. Brush each bun with melted butter and then pipe a cross on top with the piping mix
  9. Bake for 15mins or until golden brown
  10. Serve warm with butter and jam!
 
OPTIONS
Some other variations include:
  • Date and ginger – replace sultana and spices with chopped dates and ground ginger
  • Chocolate – instead of sultanas and spices add 3 tablespoons cocoa
